Mint Chocolate Chip Cookies

A great, green, St. Patrick's day treat!
I have made these cookies before, using a Betty Crocker sugar cookie mix, and Andes Mint chocolates - this works very well also!
You can find out how to make those here, but otherwise here is the from scratch recipe.
Slightly adapted from Six Sisters Stuff.

Ingredients:
2 ¾ cup of all purpose flour

1 teaspoon of baking soda
½ teaspoon of baking powder
½ teaspoon of salt
1 cup of room temperature butter
1 ½ cup of granulated sugar
1 large egg
1 teaspoon of mint extract
15-20 drops of green food colouring
1 cup of chocolate chips (plus more if desired)


Directions:
Preheat the oven to 375°F

Mix together the flour, baking soda, baking powder, salt.
In a separate bowl, cream together the room temperature butter and sugar.
Mix in the egg and mint extract.

Add the dry ingredients to the wet ingredients, little by little, until combined. 
Mix in the food colour, make sure you mix in really well, or there will be darker green speckles.
 Finally, add the chocolate chips, add more if desired.

Roll the dough into balls and place on a nonstick baking sheet. Approx. 1 tbsp. sized dough balls.

Bake for 8-10 minutes.
