No-Bake Coconut-Peanut Butter Bars
I came across this recipe from Two Healthy Kitchens, and it's a pretty healthy treat!
I made a couple of alterations, but they were a delicious.
- 3 1/2 cups of quick oats
- 3 cups of coconut
- 1/2 cup of ground flaxseed
- 1 1/2 cups of natural peanut butter
- 1/2 - 3/4 cup of honey
- 2 teaspoons of vanilla
- 1 cup of dark chocolate chips (or semi-sweet)
Mix together the oats, coconut and flaxseed.
Add the vanilla, peanut butter, and the honey.
I added 1/2 a cup of the honey, and my mixture stuck together pretty well.
Two Healthy Kitchens suggests 1 cup of honey, but that is way more than needed to make it stick, and they are already sweet enough without the extra 1/2 cup.
For peanut butter, I used Earth Balance coconut and peanut spread, but any natural peanut butter (or regular peanut butter) will work fine!
From there, I lined a 9 x 13 baking pan (you can use a bigger or smaller pan, depending on the thickness you want) with parchment paper, and added the mixture.
Then I used another piece of parchment paper to push down the mixture, so that it was very packed down, and would not crumble.
Finally, I melted the chocolate in the microwave, and spread it all over the top of the oat mixture.
Once the chocolate was evenly spread, I put the bars in the fridge until serving - this keeps the chocolate firm.
These bars are definitely a delicious treat, while still including healthier ingredients!
