Crumb Bars


Crumb Bars

One nights craving - crumb bars!
This recipe works with basically any jam, or even a mixture of jam and fruit.


Ingredients:
  • 1 cup of all-purpose flour
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 cup of quick oats*
  • 1/2 cup of brown sugar
  • 1/2 cup of softened butter
  • 3/4 cup of jam
*plus 1/2 cup extra for drizzling if desired


Directions:

Preheat the oven to 350°F

Line an 8 x 8 baking tin with parchment paper.

In a bowl, mix together the flour, baking soda, salt and oats.
When combined, add in the brown sugar.

Next, mix in the softened butter.
The best way to mix it in, is with your fingers.
Work the butter into the oat mixture.

Take two cups of this mixture, and press it to the baking tin.
Make sure it is all even, and press in very tight and flat (so it isn't too crumbly when you eat it).

Next, spread the jam on top of this.
I would suggest cherry, raspberry, or blueberry - but feel free to try whatever you want, and mix in a little bit of fruit with the jam. I used cherry jam (because that's all I had).

Finally, sprinkle the remaining oat mixture over top of the jam layer.

Bake in the oven for 35-40 minutes, or until golden brown.

Once removed form the oven, allow the bars to cool completely before cutting them.
