Whole Wheat Oatmeal Chocolate Chip Muffins
Oatmeal chocolate chip muffins are a favourite of mine! This is a healthier alternative to buying the store-bought mixes (guilty).
- 1 1/4 cups of quick oats
- 1 1/4 cups of almond milk
- 1 egg
- 1/2 cup of vegetable oil
- 1 tsp of vanilla extract
- 1/2 cup of brown sugar (plus 1/8 cup for topping)
- 3/4 cup of chocolate chips (semi sweet or dark)
- 1 1/4 cups of whole wheat flour
- 1/8 tsp of cinnamon
- 4 tsp of baking powder
- 1 tsp of salt
Preheat oven to 400°F
In a large bowl, add the milk and quick oats and mix together.
I used almond milk, but you can use regular milk as well.
Add in the egg, oil, vanilla, brown sugar and chocolate chips.
Mix together with an electric mixer.
Next, add the flour, cinnamon, baking powder and salt. Mix until combined.
You can use white or whole wheat flour.
Line or grease 12 muffin tins, and fill them until they are approximately 3/4 of the way full with batter.
Sprinkle the tops of the muffins with the 1/8 cup of brown sugar. This step is optional, but adds a little sweetness and it looks nice.
Bake for 15-20 minutes. Check by sticking a tooth pick or skewer into a muffin. If it comes out clean, with no wet batter - they are ready!
