These pancakes are light and fluffy, and they are pretty healthy?! I guess it depends on what you consider healthy... but if you want a delicious breakfast, or just a treat, these are perfect!Recipe from lecremedelacrumb.com - Made many times, and I love them! Almost better than regular pancakes!
Also, change the type of flour, sugar, oil and yogurt, and it will still work out! If it is a little thick you can add a tiny bit of water to make it a better consistency.
- 1 1/2 cups of whole wheat flour
- 2 teaspoons of baking powder
- 2 tablespoons of sugar (optional)
- 1/2 teaspoon of salt
- 1/2 tablespoon of oil (any type of oil you like)
- 2 eggs
- 1 teaspoon of vanilla extract
- 3/4 cup of greek yogurt (or regular yogurt)
- 3/4 cup of milk
In one bowl, mix together the flour (I use whole wheat), baking powder, sugar, and salt.
In another bowl, mix together the oil, eggs, vanilla, yogurt and milk (I use almond milk).
Next, whisk the wet ingredients into the dry. Mix together, until ingredients are combined, but don't over mix.
Preheat a frying pan, and grease with a little bit of butter or oil, and scoop mix out in 1/4 cup, and cook until golden, and then flip over. These pancakes tend to be quite fluffy, so make sure that the pancakes are cooked completely. I usually push down on the tops, and if the are finished they will spring back up, if they aren't, they will ooze a bit of raw batter.
Serve with syrup, butter, fresh fruit - or whatever you would like!
