Cranberry Streusel Cake

This recipe is a favourite of my family.


½ cup of margarine
1 cup granulated sugar
1 teaspoon vanilla
2 cups of  all purpose flour
1 teaspoon of baking powder
1 teaspoon of baking soda
½ teaspoon of salt
1 cup of dairy sour cream
2 cups of cranberries


¾ cup of lightly packed brown sugar

½ cup all purpose flour

1 teaspoon cinnamon

¼ cup margarine

Preheat the oven to 350°F

Grease and flour a 10” spring form pan

Prepare the cake by creaming together the butter, sugar and vanilla, then adding the sour cream. Followed by adding the flour, baking powder, baking soda and salt. 

Mix together the streusel mixture. Melt the margarine, stir in the brown sugar, then stir in the flour and cinnamon. It should be crumbly.

Spread half of the batter in the pan, sprinkle with half of the streusel mixture, then half of the cranberries. 

Spread the rest of the batter on top, then sprinkle evenly with the remaining cranberries, then the remaining streusel mixture.

Bake for about an hour, or until skewer comes out clean.
