White Chocolate Candy Cane Cookies

One of my favourite christmas treats has always been candy cane flavoured white chocolate - and I love cookies. This recipe combines the best!
This recipe is slightly adapted from Culinary Concoctions by Peabody.

2 ½ cups of all purpose flour
¾ cup of granulated sugar

1 cup of brown sugar

¾ teaspoon of baking soda
1/8 teaspoon of salt
1 teaspoon of vanilla extract
2 large eggs
1 cup of butter
½ cup of white chocolate chips
6 candy canes (smashed)

Preheat the oven to 350°F

Mix together the flour, baking soda and salt.

In another bowl, beat together the butter, egg, brown sugar, granulated sugar, and vanilla.

Mix the dry into the wet, and then add the white chocolate chips and the smashed candy cane.
I put the candy canes, unwrapped in a bag and smashed them up with a hammer.

Add more candy canes and white chocolate chips if desired.
Refrigerate for 24 hours - trust me, it helps! Or when they bake they go really flat.

Roll into balls and place on parchment paper.

Bake for 10-12 minutes.
