Soft Sprinkle Sugar Cookies

I thought these cookies were adorable, but they are actually so delicious too! 
One of my new favourites, and they were also a hit at work.


½ cup of softened butter
¾ cup of sugar
1 egg
1 teaspoon of vanilla
1 ½ cup of flour
¼ teaspoon of salt
1 teaspoon of baking powder
½ teaspoon of baking soda
1 teaspoon of cream of tartar*
½ cup of sprinkles 

*I did not have cream of tartar and after some research, I discovered lemon juice works well as a substitute, and it did! 

Preheat the oven to 350°F

In a large bowl, cream together the softened butter and sugar with a mixer.
Mix in the eggs and vanilla.

Add the flour, salt, baking powder, baking soda and cream of tartar, and mix together with a mixer until dough forms.
Add the sprinkles and mix. 

Chill in the refrigerator for 30 minutes.
Roll tablespoon-sized balls and lightly flatten on to baking tray.
I added a few extra sprinkles on the tops of the cookies.

Bake for 8 minutes.
They look undercooked, but when they cool, they flatten out and are chewy and perfect!
