Chewy Cookie Bars

I came across these chewy cookie bars while searching for recipes with coconut.
They are seriously good ... my sister and I have had so many over the past few days!
Adapted from a recipe by Myrtis Gunnels on

  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 2/3 cup of softened butter
  • 2 cups of packed brown sugar
  • 1 teaspoon of vanilla
  • 3 eggs
  • 1 cup of semi-sweet or dark chocolate chips
  • 3/4 cup of chopped walnuts
  • 1/2 cup of shredded coconut
Preheat the oven to 350°F

In a large bowl, cream together the softened butter, brown sugar, eggs and vanilla.
Add in the flour, baking powder and salt, little by little until it is mixed in completely.
Add in the chocolate chips, walnuts and coconut.

Spread the mixture evenly into a 9 x 13 baking pan.
I lined mine with parchment paper, so it made it easier to remove from the pan.
If you decide not to use parchment paper, make sure the pan is greased.
Bake for 20-25 minutes.
Let the bars cool before cutting them.
