Lemon Poppy Seed Cake

One of my Mum's many amazing recipes I grew up with!

  • ¾ cup of granulated sugar
  • 1/3 cup of vegetable oil
  • 1 egg
  • 2 tsp. grated lemon rind 
  • 3 tbsp. of freshly squeezed lemon
  • 1/3 cup of 2% milk
  • 1 1/4 cup of all-purpose flour
  • 1 tbsp. of poppy seeds 
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/3 cup of 2% yogurt

  • 1/4 cup of icing sugar
  • 2 tbsp. of freshly squeezed lemon juice

Preheat the oven to 350°F

Combine granulated sugar, oil, egg, grated lemon rind, and 3 tbsp. freshly squeezed lemon juice. Mix thoroughly, then add the milk until fully mixed in.

Combine the flour, poppy seeds, baking powder and baking soda. Mix in the yogurt, but do not over mix.

Pour the mixture into a greased (or lined with parchment paper) 9 x 5 loaf pan or lined/greased muffin tin.

Bake for 35-40 minutes.

Let cool for 10 minutes.

Combine the icing sugar and 2 tbsp. freshly squeezed lemon juice.

Poke holes in the top of the cake with a fork or wooden skewer and poor the glaze over the cake.

Serves 16 slices of cake, or 12 muffins.

Easter Inspirations

Unfortunately this Easter I am trapped at school with 4 exams, practically in a row, and can't spend it with my family or make any easter treats!

I love spice cookies - another great cookie recipe!
Adapted from a recipe by My Baking Addiction.

  • 2 ¾ cups of all-purpose flour
  • 1 teaspoon of baking soda
  • ½ teaspoon of baking powder
  • ½ teaspoon of salt
  • 1 ¾ cups of granulated sugar
  • 2 ½ teaspoons of cinnamon
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground cardamom
  • ½ teaspoon of ground allspice
  • ¼ teaspoon of ground black pepper
  • 1 cup of softened butter
  • 1 large egg
  • ½ teaspoon of vanilla extract

Preheat the oven to 350°F

Combine the flour, baking soda, baking powder and salt.

In a separate bowl, combine the granulated sugar, ground cinnamon, ginger, cardamom, allspice, finely ground black pepper. Remove ¼ cup of this mixture and set aside.

With a mixer, beat together the sugar-spice mixture with the softened butter until fluffy. Add in the vanilla and egg, and mix.

Slowly blend the dry mixture to the wet mixture. 

If the mixture is a little dry, this may be because of the size of egg you are using. Add another egg, or a little water until it is a cookie dough consistency.

Scoop balls of the dough (2 teaspoons) and roll in the ¼ cup of sugar-spice mixture.

Bake on a greased or lined baking sheet for 8-10 minutes.

Let cool for 2 minutes on baking sheet before moving to a cooling rack.
