White Chocolate Brownies

White Chocolate Brownies

I had something similar at work the other night and had to find the recipe - these are such a delicious treat if you like white chocolate.
If you don't love it, don't drizzle the chocolate on the top. 
They are still amazing without.

  • 1 1/2 cups of white chocolate chips*
  • 5 tablespoons of butter
  • 1 cup of granulated sugar
  • 2 teaspoons of vanilla extract
  • 1 cup of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
*plus 1/2 cup extra for drizzling if desired

Preheat the oven to 350°F

Grease a 9 x 9 baking pan, or line with parchment paper.

In a medium bowl, mix together sugar, eggs and vanilla, until smooth.

In a medium saucepan, combine butter with ¾ cup of white chocolate chips. Melt together over a low heat. When melted, remove from heat and mix together as best as you can.

Add the chocolate mixture to the sugar mixture.

Add the flour, baking powder and salt, until combined.
Finally add the remaining white chocolate chips.
Pour mixture into the baking pan.
Bake for 20-25 minutes, or until golden on the top.
Remove and cool completely before cutting.

If desired, melt 1/2 cup (or less) for drizzling over the brownies - make sure you let the chocolate harden before you cut them.
