Healthy Banana Muffins

On my attempt to live a healthier lifestyle, and eat my favourite things.
Here is a healthy version of banana muffins.

  • 1/3 cup of unsweetened applesauce
  • 1/2 cup of honey
  • 1 teaspoon of vanilla extract
  • 2 eggs
  • 1 cup of ripe mashed banana (approx. 2 bananas)
  • 1 3/4 cup of whole wheat flour
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1/4 cup of hot water
  • 1/4 - 1/2 cup of chopped walnuts (or dark chocolate chips)


Preheat the oven to 325°F

Grease muffin tins, or line with muffin cups.

In a bowl, mix together the applesauce and honey.

When combined, add in the eggs and vanilla.
Next, mash the bananas in a separate bowl, and them combine with the honey applesauce mixture.
The best way to mix it in, I found was with an electric mixer (but maybe I'm lazy).

Stir in the salt and flour.

In a small bowl, add the hot water and the baking soda.
Stir well, and then add to the banana bread mixture, and mix.
Finally, separate into the muffin tins, and sprinkle some chopped walnuts on top.
Bake for 10-15 minutes for mini muffins, and 15-20 for larger muffins.
The colour will change a little bit when they are ready, I just check by sticking a skewer or fork in i.
If it comes out clean, with no batter, they are ready.

Makes 45 mini muffins, or about 15 regular sized muffins.
