Simple Cheesecake

Mum and I made this for my sisters 19th birthday this past weekend, and topped it off with a bunting printable.

  • 1 cup of graham cracker crumbs
  • 2 tablespoon of granulated sugar
  • 1/4 cup of melted butter
  • 4 bricks of cream cheese
  • 4 eggs
  • 3/4 cup of granulated sugar
  • 1 teaspoon of vanilla extract


Preheat the oven to 350°F

Line a 9” springform tin with cutout parchment paper.
(We didn't want that size cake, so we halted the recipe, and used a 6" springform. Turned out perfect!)
I took the bottom of the springform, and cut a circle of parchment paper to line the bottom.
This just makes it easier when you want to remove to cheesecake from the springform for serving.

Prepare the crust.
Crush the graham crackers and add to a medium size bowl.
We used oatmeal cookies because mum doesn't like graham crackers.
We have also used digestive biscuits before too.
All taste great.
The best way to crush them, is with a rolling pin on a flat surface. 

Add the sugar, and melted butter.
Mix together.
Press down on to bottom of spring form.
For the cake, melt the cream cheese in a large bowl, and stir.
Do this carefully so you don't burn the cream cheese.
Add the eggs, sugar and vanilla.
Stir until all the lumps are out.
Pour on top of the crust.

Bake for 1 hour.
Let cool, and chill until serving.
Add fruit to top it off.
I love topping cheesecake off with fresh raspberries.
All fruit tastes amazing.
For this cheesecake we just used frozen blueberries and raspberries.
We thawed them before serving, which creates berry juice, which tastes really nice.
