Strawberry Rhubarb Pie

 Perfect summer pie recipe, with fresh rhubarb from the garden!
My mum made this pie while we were on holiday in England.
One of my favourites growing up!

  • 1 cup of strawberries
  • 2 cups of chopped rhubarb
  • 1/4 cup of sugar
  • 1/4 cup of flour
  • 1 tsp. of vanilla
  • 1/2 teaspoon of cinnamon

Preheat the oven to 350°F

Prepare the crust. This recipe works best for a 9" pie.
Follow these directions here for Step by Step Pie Crust (with a food processor), or Crisco No Fail Pastry or buy a prepared crust.
Do not bake the pie crust before putting the strawberry rhubarb mixture in!

Cut the rhubarb into approx. 1/2- inch to 1-inch pieces, and cut the strawberries to a similar size.
Place the rhubarb and strawberries in a bowl.
Add the sugar, flour, vanilla and cinnamon.

Mix together, and put inside the pie crust.
I recommend putting pastry on the top of the pie.

Bake for 30-40 minutes. 
Serve with fresh cream, or ice cream.
