Pumpkin Spice Cookies

In my recent Fall baking explosion, here is a yummy pumpkin cookie recipe I really loved.

These cookies are light, and soft - perfect pumpkin cookie recipe that is easy.
Baked with the help of my lovely housemates.

  • 1 cup of butter
  • 1 cup of granulated sugar
  • 1 cup of brown sugar
  • 2 large eggs
  • 1 cup of pumpkin puree
  • 1 teaspoon of vanilla extract
  • 3 cups of all-purpose flour
  • 2 teaspoons of baking soda
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of ground ginger
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cloves
  • 1/2 teaspoon of salt
Sugar Coating
  • 2 tablespoons of granulated sugar
  • 1 teaspoon of cinnamon

Preheat the oven to 350°F

In a medium bowl, soften the butter, and mix in the sugar, vanilla extract and eggs.
Stir in the pumpkin puree.
Add the flour, baking soda, cinnamon, ginger, nutmeg, cloves and salt.
Mix together completely.
I used an electric mixer, but you can also use a spoon - whichever is easier.

In a small bowl, mix together the 2 tablespoons of sugar and 1 teaspoon of cinnamon.
Make balls of cookie dough (I used a cookie scoop for mine)
Roll the balls in the cinnamon sugar mixture.
Place on a greased or lined (with parchment paper) baking tray.
Bake between 8-12 minutes (depending on whether you like soft or hard cookies).
I cooked mine for about 10 minutes.
Check to see if the bottom of the cookies are going golden.
