Oatmeal Chocolate Chip Muffins

Oatmeal Chocolate Chip Cookies

One of the first recipes I've baked in our new apartment with my Kitchen Aid mixer! Another take at Oatmeal Chocolate Chip Muffins.

  • 1 cup of quick-oats
  • 1 cup of buttermilk*
  • 1 egg
  • 1/2 cup of brown sugar
  • 1/4 cup of granulated sugar
  • 1/2 cup of oil
  • 1 cup of all purpose flour
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • 1/2 cup of mini chocolate chips (semi-sweet)
  • 1/8 cup of brown sugar
  • 1 teaspoon of cinnamon
  • 1/8 cup of chopped pecans
*Instead of buttermilk, use a cup of milk and a tablespoon of lemon juice.

Preheat oven to 375°F

In a large bowl, add the milk and quick oats and mix together.
I used almond milk and a tablespoon of lemon juice.
Add in the egg, oil, and sugars.
Mix together with an electric mixer.
Next, add the flour, baking powder, baking soda and salt. Mix until combined.
Line or grease 10-12 muffin tins, and fill them until they are approximately 3/4 of the way full with batter.
Mix together 1/8 cup of brown sugar and 1 teaspoon of cinnamon, and sprinkle the tops of the muffins with this mixture,  as well as the chopped pecans. This step is optional, but adds a little sweetness and it looks nice.

Bake for 15-20 minutes. Check by sticking a tooth pick or skewer into a muffin. If it comes out clean, with no wet batter - they are ready!
